Ingredients

1 wholerotisserie chicken(shredded, enough to feed four (or half for two))
a few handfulsbaby arugula
1 large handfulscallions(sliced)
a lotcilantro(chopped)
1avocado(optional, cut into the mix)
1 wholelime(juiced)
1 clovegarlic(pressed)
a few glugsolive oil
to tastesalt and pepper

Instructions

Tear apart the rotisserie chicken to shred the meat with your fingers.

In a large bowl, combine the shredded chicken with baby arugula, sliced scallions, and chopped cilantro.
